With lunch and into the afternoon, new to us "Ellis" was enjoyed and delayed Anne's visit to her mum...
Some time spent at the laptop while Anne was out - the pain in the foot having subsided...
Work done on the recent project re finding albums I used to own but had forgotten I owned...
Here are the 36 additions so far, 1st three pages of an eleven page list done...
A motley crew of records indeed...
By teatime, the leg/foot was almost back to normal...
"Masterchef" enjoyed...
Maybe I could make a raviolo stuffed with pea and ricotta, alongside a cacio e pepe (cheesy pepper) sauce, with the pasta filling having been topped with an egg yolk that oozes out when the parcel is cut?
Maybe...
Prepare the filling
1. Toast the peppercorns in the oven on a metal tray for 5 minutes
2. Whisk the peas, add ricotta cheese, spoonful of creme fraiche and mint, a little bit of lemon zest, salt and pepper and whisk again
Pasta
3. Prepare the pasta
4. Add the filling and egg yolk to the base of the ravioli and seal off with the top - ensure no air left inside and fully sealed
5. Cook for 4 minutes in boiling water so the yolk wills till run
Meanwhile, the sauce
6. Crumb the peppercorns
7. Add half a ladle of the pasta water
8. Add pecorino and parmesan plus butter - don't let it boil - stir and thicken
Then
9. Add the raviolo to the sauce
10. Plate up, cover with grated parmesan
Luna doubted I could do it...
Anne advised there was absolutely no chance...
Fair enough...
..and Luna retired to the living room floor to play with her toys...
...before settling down for some "Chicago PD"...
...by the end of which, at time for bed, my foot was somehow well and truly f*cked once again by the mere act of sitting watching the TV and so, another night of excruciating pain lay ahead...
